Cafe Rio a little diffent!

Ok so I don't usually like pork but these are SO good!! Brek loves them!!!

put a pork roast in the crock pot over night with half full of water,
then at noon the next day add
mango salsa
1 cup brown sugar
and a can of coke

Then put on a tortilla with cheese, rice, black beans, lettuce, and ranch!
You will love them!!!

Krispy Bars

1 Cup Sugar
1 Cup karo syrup
1 Cup peanut butter
Melt is a pan until it almost bubbles, then add
5 cups Rice Crispys
spread in 9x13 pan

melt: 1/4 cup of semi-sweet chocolate chips
           1/4 cup butterscotch chips
and spread over the top!

They are delicious!

Key Lime Pie




Cook time 35 min

Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup granulated sugar
4 tablespoons (1/2 stick butter) melted
2 (14-ounce) cans condensed milk
1 cup key lime or regular lime juice
2 whole eggs
1 cup sour cream
2 tablespoons powdered sugar
1 tablespoon lime zest
Directions
Preheat the oven to 375 degrees F.

In a bowl, mix the graham cracker crumbs, sugar, and butter with your hands. Press the mixture firmly into a 9-inch pie pan, and bake until brown, about 20 minutes. Remove from the oven and allow to cool to room temperature before filling.

Lower the oven temperature to 325 degrees F.

In a separate bowl, combine the condensed milk, lime juice, and eggs. Whisk until well blended and place the filling in the cooled pie shell. Bake in the oven for 15 minutes and allow to chill in the refrigerator for at least 2 hours.

Once chilled, combine the sour cream and powdered sugar and spread over the top of the pie using a spatula. Sprinkle the lime zest as a garnish on top of the sour cream and serve chilled

Garlic Mashed Potatoes

Ingredients
3 Medium potatoes peeled and chopped
1 tsp salt
4 TBS butter at room temp.
1/4 cup of sour cream at room temp.
1 tsp of finely minced garlic
1 TBS (or a little more)of milk
Salt and Pepper

Directions
In a medium saucepan, cook the potatoes in salted water until tender, about 15 minutes. Drain the potatoes and return them to the saucepan.

Add the butter, sour cream and garlic. Mash the potatoes with a potato masher or the back of a fork until the ingredients are blended. Add the milk, 1 tablespoon at a time, until the potatoes are the desired consistency. Taste and add salt and pepper, if needed.

3TBS of Frank's hot sauce
2TBS of water
3/4 Cup of Brown sugar

Mix the ingredients while you fry chicken strips up on the stove. The Sauce will be done when the brown sugar disolves. Pour over the chicken and you've got sticky fingers.

Creamy Amazing sauce- mix sauce with ranch.

I served these with garlic mashed potatoes or french fries, they were a hit. Enjoy!
